Red beans and rock sugar are boiled in a pressure cooker,

Blend with a food processor and stir-fry in a wok. When the dough forms, add an appropriate amount of olive oil

After the oil is completely absorbed, add a little cooked glutinous rice flour. The purpose of adding glutinous rice flour is to make the filling a little chewier. You can also skip it.

Add the flour and stir-fry evenly. Add oil one last time and stir-fry until the oil is absorbed. Turn off the heat

After the filling has cooled, add sugared osmanthus. Let it cool before adding sugared osmanthus to prevent the heat from taking away the fragrance of the osmanthus

Mix well and use as filling.

Pour all the invert syrup, peanut oil and water into a basin and stir thoroughly until the liquid is completely combined

Add flour and milk powder

After kneading the dough, cover it with plastic wrap and leave it for 1-2 hours.

Divide the filling into 48g portions and the dough into 15g portions

Flatten the dough and add the fillings. Use your thumb and index finger to push and wrap tightly.

Preheat the oven to 180 degrees for 5 minutes, put it in the oven, and place the second layer on top

Bake for 5 minutes and the surface will be set. Take it out, brush with egg wash and continue baking for 15 minutes

Some of the freshly baked mooncakes are a little cracked. It doesn’t matter. Leave them for 10 minutes and the cracks will heal naturally.
