When you buy the hairtail fish, ask the boss to help clean it, wash it and set it aside

Prepare accessories

Mince the onion and garlic, shred half of the ginger and slice half of it into slices

Add half of the green onions and shredded ginger to the hairtail fish, add an appropriate amount of salt and a bottle of Erguotou

Stir evenly and marinate for 10 minutes

Prepare half a bowl of flour

Wash the pot, heat it, pour in an appropriate amount of oil, not too much, and heat it until it is 70% hot

Take a piece of fish and put it into the flour. Coat both sides with flour. Tap the chopsticks on the bowl twice to shake off the excess flour.

Gently put into the oil pan

Fry until lightly browned and then turn over

Fry all the fish

Add dark soy sauce and mix well

Add light soy sauce
