【Dumb Rabbit】
Overview
In the past few years, the Mute Rabbit was quite famous in Luzhou, with many large and small restaurants popping up. Now, just thinking about it makes me drool. A lot of sea pepper and Sichuan pepper are used to fry it. All the spiciness and numbness penetrate into the rabbit meat. It is so spicy that I can’t speak. I still want to continue eating and continue to be dumb, so I call it dumb rabbit. After eating mute rabbit several times, I felt that it was not close to our Luzhou taste, so today I made mute rabbit, using my favorite ginger and bean paste, which just suits my taste

For rabbits, choose male rabbits [male rabbits have tender meat, while female rabbits have soft meat]

Cut peppercorns and dried sea peppers into sections; cut half of the rabbit into small pieces, cut into 2 squares, season with salt and soybean flour, and top with gravy; grab a lot of Sichuan peppercorns

Add more oil in the pot. When the oil is 80% hot, add a small amount of Sichuan peppercorns and deep-fry the diced rabbit. Fry for 20 seconds. Remove and set aside. [Make sure the diced rabbit is tender.]

Chop the bean paste finely and shred the ginger into thin strips

Clean the pot, add oil again, stir-fry the bean paste until it becomes coloured, add shredded ginger and stir-fry until the shredded ginger is cooked

Add the diced rabbit and fry for 30 seconds, remove and set aside

Clean the pot and add oil again. When the oil reaches 60% heat, stir-fry the pepper and Sichuan pepper until fragrant. Add a little salt

Then add the dried sea pepper and stir-fry for one minute. It feels spicy and the taste of Sichuan pepper comes out

Finally add the diced rabbit and stir-fry for 30 seconds
