Overview

When I just graduated from college, I lived in a community in Zhichunli. There was a Chengdu snack shop downstairs. Sometimes when I came back from an interview and I was tired and hungry, I would go to Chengdu snacks to eat something. Sometimes it was a drawer of steamed buns, sometimes steamed dumplings, and most of the time. The main meal was vegetarian fried rice noodles. Every time I ordered, I told the waiter that there was one portion of vegetarian fried rice noodles without garlic. Haha, I don’t like green onions, ginger, and garlic in the dish. Later on, when I asked for fried rice noodles, the waiter would automatically add that no garlic was added. Later, I moved and lived in my own house. I always thought about the fried rice noodles in that store. Occasionally I would come across fried rice noodles when I was shopping, but the taste was always not as good as the first one. Maybe it had a touch of greenness from when I first started working, so I remembered it very much. Later, under the guidance of my husband, I ate at snack bars and roadside stalls less and less often. Now I basically don’t eat them, but I still think of them occasionally. I bought dried rice noodles in the supermarket. As for the side dishes, you can mix them as you like. You can add whatever vegetables you want, or don’t add onions and garlic. You can mix them as you like, and the taste will still be great.

  1. Put the dried rice noodles and fungus into separate containers and add water to soak until soft. Prepare eggs, tomatoes, garlic sprouts, bones and other ingredients for later use

  2. Soak the dry rice noodles in water until soft, then put them in a pot and cook them (or put the dry rice noodles directly into the pot and cook them, but it will take longer)

  3. After the rice noodles are cooked, pour cold water into a bowl and set aside

  4. Crack the eggs into the oil pan and fry until cooked, add the meat and bones, and stir-fry the fungus. Stir-fry for a few times, then add the diced tomatoes and garlic sprouts one after another and continue to stir-fry

  5. Put an appropriate amount of salt in the dish and a little dark soy sauce to adjust the color (since you will need dark soy sauce to adjust the color when adding the rice noodles later, you don’t need to put too much at this time)

  6. Stir the side dishes evenly, cover and cook for a few minutes until the garlic sprouts are cooked

  8. Use chopsticks and spatula to stir-fry the rice noodles and side dishes evenly, remove and serve on a plate
