Coconut bread (bread machine version)
Overview
Recently, I have become addicted to using a bread machine to make bread. Basically, I use the bread machine to make all the bread for breakfast. Making bread with a bread machine is a good way to save time and effort. If you choose the recipe and operate it properly, the bread baked by the bread machine will also have a soft and delicate texture and taste. Many friends say that the shape of the bread machine is simple and unlike the oven, it can make more styles, and the taste is a bit single. In fact, in addition to using the recipe that comes with the bread machine, we can also use the recipe and shape that we like. Once we master the method, we can make as many variations as we want.

Ingredients
Steps
-
After the butter has softened, add the powdered sugar and beat together.
-
Add the beaten whole egg liquid a little at a time, stir gradually and then add the next time after it is completely absorbed.
-
When mixed, it is very fine and fluffy.
-
Add milk a little at a time and stir until absorbed.
-
Add grated coconut.
-
Mix well and the coconut filling is ready.
-
Add the dough ingredients except butter to the bread machine in the order of liquid first and then solid. Put the baking powder last. Make a small circle on the flour and place the baking powder in the middle. (Note: 1. Do not add all the water at once. Reserve 10-20 grams for adjustment. 2. Put the baking powder in the small depression at the top of the flour to avoid direct contact with sugar and salt, so as not to affect the yeast activity).
-
Start the kneading program of the bread machine. At this time, observe the water absorption of the dough and the softness of the dough, and then use the reserved water to adjust. After 20 minutes, the first kneading program ends. The dough has been kneaded until smooth. At this time, softened butter can be added.
-
Start the kneading program of the bread machine again and continue to knead the dough. You can see that the butter has been completely absorbed into the dough, and the dough has become delicate, smooth and elastic. After kneading for 20 minutes, take a piece of dough and slowly stretch it out in your hands. A thin film with good toughness can be pulled out, and the break will be a smooth round hole. This is the complete stage required for making toast.
-
Take out the mixing paste of the bread machine and form the dough into a round shape, then cover the bread machine lid to ferment.
-
Select the fermentation function of the bread machine, and it will be ready when fermentation reaches 2-2.5 times the original volume.
-
Take out the risen dough and place it on a chopping board to deflate and roll it into a large rectangle.
-
Spread the prepared coconut filling evenly.
-
Roll up from top to bottom and pinch tightly.
-
Cut through the middle with a knife.
-
Twist the cut side upward into a figure 8 shape and pinch both ends tightly.
-
Put it into the bread machine and select the fermentation function for final fermentation.
-
After fermentation, the dough will be about 2-2.5 times its original volume. Select the baking function and set the time to 40 minutes. The color should be medium. After baking, take out the bread and let it cool completely before slicing it into a fresh-keeping bag.
