In busy days, I occasionally take some time off, make some desserts with a happy mood, and sit lazily on the sofa, with sunshine, coffee, egg tarts, and a book, full of joy.

Put whipping cream, milk, and caster sugar in a milk pan, stir evenly, and heat until the caster sugar is completely melted

Pour the egg yolk into it, sift in the low-gluten flour, and stir evenly (I forgot to take a picture of this step, hehe) This is the egg tart water

Place the tart crust on the baking sheet

Pour in the egg tart water until it is 70% full

Put the baking sheet into the preheated oven, middle rack, 210 degrees, about 25 minutes,
