Cut open the hairtail fish, clean it, marinate it with cooking wine and salt for 15 minutes;

Dip in a thin layer of dry flour;

Fry until golden brown;

Leave a little oil in the pot, add aniseed, onion, ginger and garlic, add water, light soy sauce, seafood soy sauce, sugar and balsamic vinegar, then add hairtail and simmer over medium-low heat for 15 minutes;

The fire collects the soup. Note that the bottom of the pot is easily burnt at this point!
