Spicy fried rickets shrimp "crayfish"
Overview
In our area, this shrimp is called rickets shrimp, perhaps because the shrimp's body is rolled up after being cooked. I really don’t know what the scientific name is. It is also called crayfish for the time being. This kind of shrimp is suitable for stir-frying. I do the same thing for spicy crayfish.

Ingredients
Steps
-
Use a small brush to scrub the shrimp clean
-
Heat the pan, pour in peanut oil, and add peppercorns, peppercorns, bay leaves, cloves, licorice, ginger, and garlic. Because green onions tend to burn easily, wait until the shrimps are in the pot before adding them.
-
Stir-fry the Sichuan peppercorns, peppercorns and other ingredients until fragrant, add the shrimps, then add the green onions and continue to stir-fry. Stir-fry for three to five minutes and add appropriate amount of water. Stew.....
-
During the stewing process, add soybean paste, oyster sauce, and salt to the boiling water. Continue to stir-fry.

The stir-fried soup is almost dry. I like to save some of the soup and eat it with the shrimp.
