It’s been a long time since I’ve eaten home-cooked fish, and I miss it so much~~~ I really wanted to eat it today, so I went to the market to buy a grass carp and prepared it for braise.   1. Wash the fish, cut into pieces, marinate with salt and cooking wine for half an hour, then add appropriate amount of starch and mix well.

  2. Cut the onion and celery into sections, slice the ginger and garlic, and cut the dried chili into two sections (if you like spicy food, you can chop it into smaller pieces).

  3. Take a bowl and add salt, light soy sauce, sugar, vinegar and cooking wine to make a juice; take another bowl and mix the water and starch, not too thick or too thin (my bowl is a bit thin).

  4. Pour oil into the pot. When the oil temperature reaches 70%, mix the fish section by section in the water starch before adding it to the pan.

  5. Fry the fish until golden brown on both sides and take it out of the pan.

  6. Leave a little oil in the pot. After the oil is hot, add onions, ginger, garlic and dried chili peppers and saute until fragrant. Then add the previously prepared juice, and then add an appropriate amount of water.

  7. Put the fish pieces into the pot, simmer over medium heat for a few minutes, and then thicken the sauce.
