Stir-fried Bitter Melon and Shredded Potatoes
Overview
Bitter melon clears away heat and relieves internal heat, but because of its bitterness, many people don’t like to eat it. Then reduce the bitterness and let more people accept bitter melon as a vegetable. It's a good choice to stir-fry with shredded potatoes.

Ingredients: Bitter melon, red bell pepper, potatoes, onions, garlic.

Remove the flesh of the bitter melon and scrape off the white film inside the bitter melon to reduce the bitterness. Cut the bitter melon into thin slices.

Cut the red bell pepper into thin strips, chop the green onion into finely chopped pieces, and pound the garlic into minced pieces.

Shred potatoes.

Turn on the heat and pour oil into the pot.

Heat oil, add chopped green onion and garlic and saute until fragrant.

Add shredded potatoes and stir-fry.

Add the bitter melon slices and continue frying.

Add salt and pepper to taste.

Add red pepper shreds, stir well and turn off the heat.

Serve on a platter.
