Overview

Potato sauce rice dumplings are a very affordable fast food with rice and vegetables in Northeast China. They are very popular among young and old. In the streets and alleys here, there will always be stalls selling rice bags, a piece of Chinese cabbage stuffed with rice, green onions, coriander, lettuce, potato sauce, chili oil, and other ingredients to ensure you have a delicious meal. When I was a child, my grandma made potato sauce for us by steaming the potatoes in a pot, then crushing them, and finally frying the potatoes in oil, making them into a puree and adding it to the sauce. It was old-fashioned potato sauce, dry and fragrant. When my mother makes potato sauce for us, she cuts the potatoes into cubes, then puts oil in the pot, adds the potato cubes and stir-fries, then adds the sauce, adds water to cover the potato cubes, and slowly simmers until cooked. I have simplified the steps now, frying the sauce directly in the pan, pouring in potato cubes and simmering, but I think it tastes better this way, the mashed potatoes are more delicate and flavorful, and with the Northeastern homemade miso, it is so fragrant.
