The soybeans are left over from making peanut soy milk. I asked someone to soak the soybeans, but someone had big hands and paws and soaked them too much. So I just fried them and ate them...

Soak the soybeans in warm water overnight;

Boil the fermented soybeans in salted boiling water for 10 minutes, remove and set aside;

Peel the green bamboo shoots, wash and dice them; peel and dice the carrots;

Heat oil in a pan, add carrots and bamboo shoots and stir-fry;

Add the cooked soybeans and stir-fry evenly;

Add appropriate amount of stock and simmer for 2 minutes;

Add appropriate amount of light soy sauce and salt, stir-fry evenly and serve.
