The front elbow I used is relatively thin, so I used a knife to scrape off the impurities on the skin of the elbow

Wrap the washed elbow with clean cotton thread into a ham shape.

Put water, (sauce and meat ingredients), cooking wine, onion and ginger, one spoon of light soy sauce, one spoon of dark soy sauce into the electric pressure cooker, pour in the remaining soy sauce soup, and add an appropriate amount of salt.

Add the elbows and large stick bones and press in a pressure cooker for 20 minutes

Soak the pressed elbows in brine for 2 hours to absorb the flavor.

Wrap the stewed elbow tightly with plastic wrap and put it in the refrigerator to cool down. (If your elbow is very hot, it’s best to wrap it in plastic wrap with a clean towel)
