Growing up, whenever my mother stewed this dish, I would secretly eat up all the bamboo shoots in it. I prefer the vegetarian food in it, which absorbs the aroma of the meat and the taste of the vegetarian food itself. I don’t get tired of it no matter how much I eat

Prepare the ingredients and blanch the ribs. There are no dried bamboo shoots in the supermarket near my home, and there are few fresh bamboo shoots in the north, so the water-grown bamboo shoots you buy must be soaked before use. Blanch them to remove the sour taste. The tofu skin is knotted. Some tofu skin is easier to break. You can roll it up and tie it with white cotton thread

Stir-fried sugar, three tablespoons of white sugar, stir-fry over low heat

Appropriate amount of dark soy sauce, two star anise, soy sauce can be added little by little, taste it, it will be saltier than usual for cooking

After evenly coloring, transfer to the rice cooker, wash the cinnamon and two chili peppers and put them in. In order to increase the taste, you can omit the chili pepper if you don’t like spicy food. If you like spicy food, add more. Boil the pot and simmer for about 20 minutes. Add the bamboo shoot slices and peeled eggs. After another ten minutes, add the tofu knots and simmer for another ten minutes. This dish can be stewed in advance and the electric pot is set to keep warm. This dish is best in winter, as you don’t have to worry about the previous dishes getting cold after finishing the cooking
