Cut onions into small sections and mince garlic. Slice ginger, cut garlic sprouts into sections, and cut pork belly into small pieces, about 2 cm

Heat a little oil in a pan, add pork belly pieces and stir-fry until slightly brown, remove the meat after oil comes out and set aside

Leave the base oil in the pot, add white sugar and stir-fry until it turns sugary color. Add pork belly, star anise, Sichuan peppercorns, pepper, chili, onion, ginger and garlic and stir-fry twice. Pour cooking wine along the edge of the pot, then add a small amount of soy sauce and a small amount of vinegar, stir-fry twice

Add boiling water to cover the meat. After boiling, reduce the heat and simmer for about half an hour. When the soup is almost dry, add the garlic sprouts and stir-fry until the garlic sprouts are half cooked and serve.
