Luffa fried fish noodle
Overview
During our local Chinese Valentine's Day, we eat a fried product called noodle fish, which is to put very soft fermented dough into a fish-shaped mold and then fry it in an oil pan. Some families don't have molds, so they just roll out the fermented dough into pancakes, cut them into rectangles, and fry them in a pan. The fried noodle fish is very chewy and delicious because of the addition of a little salt, but it is not as soft as the fried dough sticks. This year, my mother-in-law also fried a lot, so I chose a few harder ones and made this dish.

Prepare tougher fish.

Cut the fish into small cubes, dice the peppers, slice the garlic, and cut the green onions into sections.

Peel the loofah, cut into pieces and soak in light salt water.

Put a small amount of oil in the pot and sauté the onion, garlic and pepper until fragrant.

Add the loofah and stir-fry.

Add fish and stir-fry.

Add appropriate amount of water, salt and black fungus and cook briefly. Remove from the pot when the soup is almost gone.
