Japanese soba noodles

Overview

Soba noodles often appear in Japanese dramas. Every time I see them, I think: they must be delicious. I happen to have some katsuobushi flowers at home, which can be used to make Japanese-style soup stock. Although there is no Japanese soy sauce, I can use light soy sauce instead, and the taste is also excellent.

  1. Cook the buckwheat noodles as usual

  2. Drain the cooked soba noodles, add ice water, then put a few ice cubes on it and chill

  3. Use bonito flakes and kelp to cook a pot of Japanese soup stock (I have posted this recipe before, so I won’t describe it in detail). Add an appropriate amount of light soy sauce and chili pepper (choose according to taste) to the cooked broth, cook for 5 minutes, then turn off the heat, filter out the chili pepper, sprinkle in an appropriate amount of white sesame seeds, cool and set aside.

  4. Finally, sprinkle nori and white sesame seeds on the plated noodles, and you’re ready to eat~
