  1. After the ribs are blanched in boiling water, add water and ginger slices. Bring to a boil over high heat and simmer for 30 minutes. Do not throw away the soup used to cook the ribs

  2. After cooking, add three spoons of light soy sauce, one spoon of dark soy sauce, three spoons of vinegar and two spoons of cooking wine and marinate for 20 minutes

  3. After marinating, rinse with water, remove and drain, put oil in a pan and fry over high heat until both sides are golden

  4. Pour the oil into the pot, add the remaining juice from marinating the ribs, a bowl of soup for cooking the ribs, four spoons of sugar and half a spoon of salt, bring to a boil over high heat and simmer for ten minutes

  5. Reduce the juice over high heat and add a spoonful of vinegar

  6. Sprinkle with sesame seeds and it’s ready
