Wash and process the squid.

Cut circles without cutting off the bottom, and place into a long dish.

Cut some shredded ginger and spread it on the surface, pour a spoonful of rice wine to remove the fishy smell.

Put it into a pot of boiling water and steam over high heat for 3-5 minutes.

After steaming, open the lid.

Cut the chives into shreds.

Pour off the excess steamed soup (be sure to pour it away) and put onion shreds on top.

Pour the smoking oil over the green onions.

Drizzle another spoonful of steamed fish soy sauce and it's done perfectly.
