Delicious hot or cold-----Soaked Hairtail Fish
Overview
Because dark soy sauce is added during pickling, the color is darker, but the taste is very good. Although it has been fried, this hairtail is soaked in soup afterwards, which makes it much less greasy and healthier to eat. It is delicious hot or cold.

Prepare the ingredients needed to make the soup.

Put a small amount of oil in the pot, first add the dried chili pepper, Sichuan peppercorns and star anise and stir-fry until fragrant.

Add scallions, ginger and garlic and stir-fry.

Pour in boiling water, simmer for 5 minutes, and turn off the heat.

Let cool and then refrigerate.

After cleaning the hairtail, cut it into sections, drain the water, and add marinade ingredients (please see the tips below).

Mix thoroughly and marinate for 30 minutes.

The marinated hairtail fish is fried in the oil pan.

Put the fried hairtail into the refrigerated soup and soak for about 15 minutes before eating.
