Overview
Pan-fried stuffed tofu is a traditional dish in Guangdong Province. It belongs to Cantonese cuisine and is indispensable during every year and festival. The finished product has tough skin, tender meat, smooth and refreshing taste.

Mix the minced meat, leeks, green onions, salt and chicken essence to form the filling; peel the shrimps, remove their heads and devein and set aside.

Make a small square hole in the middle of the old tofu, add the fillings, and top with shrimps.

Fry the tofu over slow heat until golden brown on both sides and set aside.

Leave the oil in the pot, sauté the onions until fragrant, add the fried tofu and red 99 hot pot base ingredients, stir well and then pour in a little water and cook slowly over low heat. When the flavor is absorbed, place the tofu on a plate, add thickening sauce and sprinkle with chopped green onion.
