Steps
-
First weigh out 3g of salt, 35g of sugar in an eggbeater, add 120g of water and 40g of eggs. (Remember to reset the electronic scale to zero every time you add a material)
-
Then add 250g of Jinmo Mill high-gluten flour and 3g of yeast (the order of adding ingredients does not have to be in this order, but be sure to separate the salt and yeast to prevent the salt from killing the yeast and losing its activity.)
-
Use your hands to make circles and mix the flour and liquid evenly
-
Use a scraper to move the mixed dough onto the kneading mat and prepare to start kneading
-
When kneading the dough, use the base of one hand to push forward and the other hand to gently support
-
Knead repeatedly for about 5 minutes, when gluten begins to form
-
At this time, flatten the dough and add 25g of softened butter
-
As before, rub with the heels of your hands repeatedly
-
When the dough is not very sticky, start pounding the dough on the kneading mat. (The dough will be sticky when you just add butter, please be patient and knead it, it will become less sticky after about 5 minutes)
-
Beat repeatedly and fold about 150 times. The dough will become smooth and it is almost ready. Then use a scraper to round the dough
-
After rolling into a ball, cut into a small piece to check whether the kneading is complete
-
Gently stretch it with your hands (remember to pull hard), and you can see a chewing gum-like film to complete the kneading. This is what we call the "glove film"
-
Knead the dough together, roll it into a ball again, put it into a basin, cover it with plastic wrap, and now you can start the first fermentation
