In spring, the mint planted on the rooftop is tender and green.

Cut a handful and select only its young leaves. Discard the branches and wash them.

Chop finely and put into a bowl.

Crack in two free-range eggs. I cracked a big egg, it turned out to be a double yolk egg.

Put some oil in the electric baking pan and spread it evenly with lemon slices. If there is no lemon, you don’t need to use it.
