Soak dried shiitake mushrooms and cut into small cubes; cut potatoes and tomatoes into small cubes; mince garlic;

Heat oil in a wok and sauté garlic until fragrant; add mushrooms and stir-fry; add potatoes and continue stir-frying;

Add dark soy sauce and stir-fry to let the potatoes color; add tomatoes and stir-fry then add light soy sauce; stir-fry evenly and add an appropriate amount of hot water, and add an appropriate amount of salt according to the situation; bring to a boil over high heat;
