Edamame and meatball soup
Overview
As today is the Mid-Autumn Festival, I should wish everyone a happy holiday. Although my family rarely celebrates festivals in a grand way, we still have to make meatballs or something to symbolize reunion. Also, I’ve been eating edamame at home for a long time, and I’m really tired of it! I don’t want to eat any more edamame beans! Well, just break the edamame into pieces and fool yourself. But the color is quite nice and green. I hope the children can have a good Mid-Autumn Festival.

Wash the edamame and crush it in a food processor (I didn’t crush it very well)

Chop the pork and green onions, add an egg white, a spoonful of cooking wine, a little soy sauce, a little salt, stir well

Add cold water to the pot, shape the minced meat into meatballs, and put them into the water

When the water boils and the meatballs are formed, take them out

Pour a little oil into the pan, add minced garlic and saute until fragrant

Add chopped edamame and stir-fry for a few times

Add water and cook for 2 minutes. There may be foam in the middle, just skim it off with a spoon

Add the meatballs and cook for a while

Adjust a little water starch to thicken

When the soup becomes thicker, take it out of the pot and sprinkle some chopped green onion
