Prepare ingredients.

Peel the cucumber and cut into diamond shapes.

Crack the eggs into the bowl and scatter.

Heat oil in a pot (some have induction cookers).

When the oil is 70% hot, add the eggs and stir-fry quickly.

Fry briefly.

Dish out and set aside.

Leave oil in the pot, add cucumber slices and rice pepper and stir-fry until cooked.

Fry until soft, add the previously scrambled eggs, stir evenly (I forgot to take a picture of this step), and add salt and light soy sauce to taste.

Remove from pot and plate.
