This is the first time I have eaten such delicious cucumbers. So I asked the boss what kind of cucumbers were used, and the boss said they were fruit cucumbers. In the past, you could often see small, green cucumbers for sale in supermarkets in the south. But I haven’t found such cucumbers since I came to the north. I used another kind called white grass cucumber instead, which is just as crispy and delicious. The taste is very close to the one in the store.

Cut the cucumber into thin slices and marinate with a little sugar for about 15 minutes. (Don’t use too much sugar, just a little)

After half an hour, pour out the pickling water and squeeze the cucumber dry with your hands. (The amount of salt is more than sugar, the purpose is to force the water out of the cucumber)

While the cucumbers are cooking, prepare the side dishes. Cut the pork into small dices, cut the green onions into small sections, mince the ginger, slice the garlic, cut the green and red peppers into rings, and prepare a few Sichuan peppercorns.

Add appropriate amount of oil in the pot, add diced pork and stir-fry.
