[A good choice to relieve the heat] Lotus seed and red bean soup
Overview
I bought some lotus seeds a few days ago, and I thought about making a dessert that would bring us a bit of coolness in the hot summer, so I made this simple lotus seed and red bean soup.

Steps
-
Peel the lotus seeds inside the lotus pods, marinate them with sugar and set aside.
-
Rinse the red beans in running water and soak them for several hours.
-
Pour the soaked red beans and water into the pot. After the water boils, turn down the heat and simmer for half an hour and 20 minutes.
-
It is best to pickle lotus seeds until they turn into water.
-
The red beans are almost done after 20 minutes of cooking.
-
Pour the pickled lotus seeds into the pot along with the sugar water.
-
Cover and cook for 10-20 minutes.
-
Cook until the red beans open and turn white, and the lotus seeds are slightly dyed by the red beans. Then add sugar and cook over high heat. Cook until the sugar dissolves and then turn off the heat.
