It is best to choose minced meat with alternating fat and lean meat. Soak the dried prunes in cold water until soft and wash away the sediment.

Add boiling water to the flour and stir with chopsticks to form a fluffy consistency.

Knead the dough into a uniform and smooth dough, wrap it in plastic wrap and let it sit for about 30 minutes.

In the meantime prepare the fillings. Pour oil into the pan, heat it up, add minced meat and stir-fry until cooked through.

Add the prunes and sugar and stir-fry evenly, simmer for about 5 to 10 minutes until the flavor is infused, let cool and set aside.

Sprinkle a little flour on a cutting board, divide the dough into four equal parts, and knead into a smooth and even dough.

Roll the dough into a ball slightly larger than the palm of your hand and fill it with filling.

Pinch the mouth tightly and flatten slightly.

Use a rolling pin to roll the dough into a thin pancake, turning it over properly while rolling so that the fillings on both sides are evenly distributed.

Heat the pan, put the pancake into the pan and fry over low heat until both sides are golden brown.
