Boil the pork spine and crescent bones in a pot under cold water until the bleeding water drains out.

Put all the ingredients except dark soy sauce, soy sauce, and sugar into the pot, leaving half of the garlic. We can prepare more garlic at the beginning. Stir-fry the ingredients until fragrant, then add sugar and stir-fry until brown.

Add the bean paste and start stir-frying until the sauce becomes fragrant.

Add the bones to the pot and stir-fry.

Add soy sauce and dark soy sauce and continue stir-frying. Add water to the pot, add more water until the bones are slightly exposed, bring to a boil over high heat, then turn to medium heat and cook until the juice is reduced.

Before taking it out of the pot, add the remaining minced garlic. If you like spicy food, you can add a red pepper when cooking the bones.
