【Fan Crab】
Overview
Crab is one of my husband’s favorite seafood. In the past, it was used for steaming or frying rice cakes. Today I paired it with fans for the first time and it was as delicious as expected. Extremely fragrant and fresh.

Peel some garlic, cut 2 slices of ginger, wash and drain the crabs.

Soak the vermicelli in cold water until soft. Immediately drain and set aside.

Heat oil in a pan, add garlic and ginger and saute until fragrant.

Add crab and stir-fry evenly.

Add 3 more eggs and fry until cooked.

Mix with water, add 1 teaspoon cooking wine, 1 tablespoon light soy sauce, and 1 tablespoon oyster sauce.

Stir well, add vermicelli, cover and simmer over medium-low heat for a while.

When the juice is almost reduced, add salt and stir-fry until the juice is reduced. Remove from the pan and sprinkle with chopped green onion.
