Overview
Stir-fried vegetables are a traditional specialty dish in Beijing and belong to the Beijing cuisine. Hecai is a dish that stir-fries leeks, shredded pork, vermicelli, bean sprouts, and baby spinach together. It is a very particular dish in northern China.
