As a Northeastern person, I like to eat sauerkraut. But I don’t like meat, so this sauerkraut and potato stew is my favorite! A bowl of sauerkraut stewed with potatoes and a bowl of white rice, wow!

Chop sauerkraut into thin strips, soak in white water and squeeze out the water.

Cut part of the potatoes into strips and insert part into shreds. Do not wash them with water. Keep the original starch of the potatoes. You can add more chopped green onion. After all, it is a vegetarian dish, and using chopped green onion can enhance the flavor.

Add oil to the pot. I added soybean oil from Northeast China. Heat the oil, add sauerkraut and stir-fry.

Sauerkraut is basically fried.

Slightly shovel the fried sauerkraut to the side of the pot (pour out the empty space for frying), add chopped green onion, pepper noodles, and light soy sauce, mix the sauerkraut together and stir-fry for a few times, then add shredded potatoes and potato strips, and stir-fry.

Add water to cover the sauerkraut and potatoes. This dish will taste better after simmering for a while, so I added more water. Then add some dry flour and sprinkle it on the water to act as a hook (if you have rice soup for porridge, you can also replace the flour with rice soup and add a few spoons of it for a better effect). The sauerkraut stewed potatoes made in this way will be stickier and have a better taste. Add salt, cover the pot, and start simmering!
