No need to fry minced pork and eggplant
Overview
I have never liked making eggplants because they basically have to be fried first. Finally, there is an eggplant with minced meat that doesn’t need to be fried. It’s delicious~

Cut the eggplant into strips as shown in the picture, mince the pork, chop the garlic into fine pieces, soak the eggplant in water and set aside for final use

Heat the pot until the cooking oil is added, add some minced garlic

Add minced meat and stir-fry, add a small spoonful of cooking wine, sugar, soy sauce, a little salt, and oil (you can omit it if you don’t have oil, mainly to enhance the freshness)

Fry until the minced meat is evenly colored and set aside

Clean the pot, heat it up, add an appropriate amount of minced garlic and stir-fry until you smell the aroma of garlic. Add the eggplant and stir-fry until the surface of the egg becomes darker in color

Pour a bowl of water (the amount is based on soaking the eggplant), cover it, turn to medium heat and cook until the water is dry and the eggplant becomes soft
