Steamed Yogurt Raisin Cake
Overview
Beautiful, right? It tastes soft and sweet, and you can even eat raisins when you chew it, which is really good! This evaporated cake uses yogurt and eggs as the main ingredients, and raisins, cranberries, and dragon fruit as the auxiliary ingredients. It does not require an oven, but uses a rice cooker. Of course, you can also use a steamer. It is simple and convenient.

Steps
-
Use an egg separator to separate the egg whites and egg yolks of the three eggs and place them in two basins.
-
Add sugar to the egg yolks and stir evenly with a spoon.
-
Yogurt preparation.
-
Pour the yogurt into the egg yolks and stir evenly (you can also use milk. I used yogurt because I had too much yogurt at home.)
-
Sift in low-gluten cake flour and mix evenly.
-
Stir into a paste and drip slowly.
-
Fry the egg whites with a whisk. I only added sugar once because my baby and I don’t like it to be too sweet. If you like it sweet, you can add the sugar in three batches and beat.
-
Finally, whip until it can drip slowly.
-
Add the beaten egg whites into the egg yolk flour batter you just prepared in three batches.
-
I poured the raisins in so they were spread throughout the cake.
-
I left a little bit of the egg white paste and batter and added the dragon fruit.
-
Use a mixer to mix the egg white batter, egg yolk batter and dragon fruit evenly to make the first layer of cake. In fact, it’s for the sake of looking good and tasting.
-
Pour the yellow egg batter into a rice cooker coated with olive oil, bang the pot a few times to disperse the bubbles, then pour in the dragon fruit paste prepared later, and spread it evenly on the yellow batter.
-
Add dried cranberries and arrange them in the style you like. You can add more if you like.
-
Put it into the rice cooker and use the cooking or steaming mode. Generally, it can be steamed in more than half an hour.
