Ingredients
Steps
-
Clean the chicken, chop into large pieces and set aside;
-
Prepare American ginseng slices, cordyceps flowers and ginger. Ginseng slices are available in pharmacies;
-
Bring an appropriate amount of water to a pot and bring to a boil, pour in 15 ml of cooking wine, and pour in the chicken pieces and water to remove the fishy smell;
-
The chicken that has flown over the water is moved into the clay pot. I usually boil water in two pots at the same time. The flying pot uses high heat and the casserole uses low heat. In this way, after the chicken flies into the water, the water in the casserole is hot enough, and the chicken pieces can be boiled quickly when placed in the casserole;
-
At the same time, wash off the dirt from the ginseng slices and cordyceps flowers, and soak them in hot water for 15 minutes to soften them. If you buy fresh cordyceps flowers, you can skip this step and just wash them;
-
Peel and slice ginger for later use;
-
Add ginger slices;
-
Don’t pour away the water in which the ginseng slices and cordyceps are soaked, pour them all into the casserole;
-
Bring to a boil over high heat, turn to minimum heat and simmer for 2 hours;
-
Finally, add an appropriate amount of salt;
-
Finished product.
