【Wenzhou】Shiitake Mushroom, Soybean and Pork Skin Jelly
Overview
This dish is available all over the country, and many of my friends say they loved this dish when they were young. Mushroom and soybean meat jelly is a dish made with pig's trotters and soybeans as the main ingredients. When we were children, we loved to eat this dish when the twelfth lunar month came. The weather was cold and the frozen pork skin was so chewy. It was so appetizing to use it with rice. In the past, it was simply stewed pork rinds with soybeans, but now I add other ingredients according to personal preference. This time when I go out to eat, I add whole broccoli and corn. The colors are really beautiful.

Prepare mushrooms, soybeans, and pork skin.

Bring water to a boil and blanch the pork skin until soft.

Scrape both sides of the pig skin clean and cut into small sections.

Soak and wash the soybeans in advance and add water to the stew pot.

Put the processed pork skin and soaked mushrooms into the pot with a knife.

After simmering for three hours, add fine salt to taste.
