  1. The clams soaked in water and spit out mud.

  2. Heat oil in a pan. Add peppercorns, Sichuan peppercorns, dried chili peppers, and black bean paste, and stir-fry over high heat to bring out the spicy flavor (it’s best to wear a mask). You can add some sugar or not according to your personal taste.

  3. After the spicy ingredients are stir-fried, add the clams and stir-fry a few times (no need to add water, the clams will produce a lot of water on their own). Then cover and simmer for 5 minutes (you can add a little salt as appropriate).
