Prepare pork and fried tofu.

Clean the meat and cut into large pieces.

Put the meat pieces in cold water, add cooking wine and ginger slices and blanch for three minutes.

Rinse with cold water to remove any scum.

Heat oil in a pan.

When the oil is 40% hot, lower the heat and add rock sugar to boil until it turns brown.

When the sugar turns slightly yellow.

Add the meat pieces and stir-fry evenly.

Add fried tofu.

Stir fry evenly.

Transfer to an electric pressure cooker, add cinnamon, star anise, bay leaves, salt and oyster sauce and simmer for 20 minutes.

After the time is up, remove from the pot and serve on a plate, sprinkle with chopped green onions for decoration.
