Overview
The meat of the sea bass is delicious and the price is affordable. There are no small bones in the fish. The fish steaks with the belly bones removed can be eaten to your heart's content.

Slaughter and clean the sea bass, and cut off the fish head with a knife.

Cut the fish into two pieces and remove the backbone and abdominal spines. Fish heads and fish bones can be stewed into fish soup by adding some tofu.

Cut the fish into large pieces.

Soak the large fish fillets in the onion and ginger water for 10 minutes.
