Mooncakes with fillings
Overview
This year’s internet celebrity mooncake has fillings that include not only bean paste and salted egg yolk, but also mochi and meat floss. I was lazy and I happened to have snowskin mooncake pre-mixed powder at home. I mixed it with boiling water above 85 degrees and it was ready! It’s also QQ!

Bake the salted egg yolks in the oven at 160 degrees for 5 minutes, then spray with white wine while still hot

First make water-oil crust: put flour, powdered sugar, lard, and warm water into the bread machine bucket

Start the dough kneading function and knead the dough until the dough comes out

Take 1 piece of dough and roll it into a shape of beef tongue

Roll up. After rolling, turn the seam upward, cover with plastic wrap, and let rest for 20 minutes

After it is loosened, take one portion, close it upwards, and roll it into a long shape with a rolling pin

Prepare fillings: add 50 grams of snowskin mooncake pre-mixed powder to 50 grams of boiling water (above 85 degrees), mix well and knead into glutinous rice balls, divide into 10 portions, salted egg yolk is a bit big, I cut it in half, meat floss, bean paste filling

Take an appropriate amount of ingredients and decide the order. Mine is with salted egg yolk at the bottom, then glutinous rice skin, pork floss, and about 15 grams of bean paste

I wrap the stuffing first and set aside

Take a loose roll and bring the two ends closer to the middle

Use a rolling pin to flatten and roll it into a large size, then wrap the prepared filling

Close your mouth slowly and be sure to pinch it tightly

Place it on the baking sheet with the seam side down. I also stamped it in red. You can skip this step

Place in the preheated oven and bake at 180 degrees for 20 minutes
