Cleaned fresh shrimps also need to remove their shells

Prepare the sauce for marinating the fresh shrimps: add two spoons of soy sauce + one spoon of cooking wine + a little minced garlic + a little salt + a little sugar + a little allspice + a little white pepper

Put the shrimp into the sauce and soak for three seconds, then put it on a plate and marinate for 15 minutes

Prepare spring roll wrappers

Choose how many spring roll wrappers to use according to how many shrimp rolls you need to make. Cut the spring roll wrappers in half and cut them into two triangles

Take a shrimp, then wrap it in shrimp paste, wrap it up, and finally apply egg liquid to stick it

Set aside the rolled shrimp rolls and heat oil

Heat the oil until it is 70-80% hot, turn down the heat to medium-low, put the shrimp rolls in, and fry for about 4-5 minutes

Roll up the golden shrimps in the pan, let them cool for a while, then put them back in the oil pan and fry them again. The skin will be crispier.
