First put the liquid in the bucket of the bread machine - eggs, milk, light cream, then add sugar and salt, then pour in a thick layer of low-gluten flour, then dig a hole in the middle of the high pile of flour, pour in the yeast, bury it with flour (don't let the salt at the bottom of the bucket touch the yeast, otherwise the yeast will be salted to death), turn on the dough program of the bread machine, and beat the dough until it is mittened. (If you really can’t afford the film, you can also apply it to the extension stage)

Place it in the bread machine bucket, close the lid, turn off the power, and let it ferment for the first time until it reaches 2 to 2.5 times the volume without shrinking.

Take it out and press it with your hands to release the air and break the pores. Shake hard 50 times, then push and rub 50 times with your hands.

Divide into 3 portions.

Cover with plastic wrap to prevent the surface from drying out. Wait 20-30 minutes

Take a piece of dough, start from the middle of the dough, roll it up and down, then roll it up from the top down and flatten it. After flattening, repeat "roll out and roll up" twice.

Roll up from top to bottom. Do the same with the other 2 small dough balls.

Place in a bread box and let rise.

Let it rise until it is 7-8 minutes full, put it in a preheated oven, heat it up and down at 150 degrees for 50 minutes, cover the bread with tin foil to prevent it from burning.

Immediately after baking, pour it out and let it cool. If you don't eat it immediately, it will have a sour taste. Wait for more than 3 hours until the sourness of the wine has evaporated before you can eat it.
