Wash the small eels and remove the moisture.

Wash and cut celery, shred ginger, and cut dry chili peppers and set aside.

Heat the oil pan, add shredded ginger and red pepper

Then add the dried eel and stir-fry until fragrant. Add a little salt, cooking wine, light soy sauce, and sugar in turn and stir-fry until fragrant.

Add the celery and stir-fry, add a small amount of boiling water, close the lid and cook over medium-low heat until the juice is reduced
