Flower whole wheat breakfast buns (secondary refrigerated fermentation method)
Overview
There is a recipe that I love recently. The original recipe comes from the idol @Huihui Food Notes. I changed it slightly and added some whole wheat flour. I tried the second batch of refrigerated fermentation and found that the effect is not bad. It can definitely be added to my quick breakfast series. Knead the dough and shape it the night before, put it in the refrigerator for the second time, and bake it for 20 minutes the next day, and then you can eat soft and delicious bread. It is really a happy thing to think about it.

Steps
-
In the order of bottom layer of liquid, middle layer of flour, upper layer of sugar, salt, and yeast, put all the ingredients for the main dough into the bread machine barrel, turn on the custom kneading function (two programs), and set the time to 26 minutes.
-
After 10 minutes, the dough has pulled out a relatively thick film.
-
By the end of the kneading process, the dough has been kneaded to the expansion stage, and a thin film can be stretched out at this time.
-
Round the dough and start the bread machine's fermentation program for an hour.
-
Ferment until the dough doubles in size. Dip your finger in flour and poke a hole. If it does not shrink or collapse, it means the fermentation is complete.
-
Use a rolling pin to deflate the fermented dough and divide it into 12 pieces of dough. Roll them into a round shape and cover with plastic wrap to rest for 15 minutes.
-
While the dough is resting, lightly coat the inner wall of the mold with softened butter.
-
After the relaxed dough is flattened, roll it into a round shape again. Place 6 pieces in a circle one by one in the mold.
-
After placing it, seal the mold with plastic wrap and refrigerate overnight for the second rise, about (10 hours).
-
The next morning, take out the second risen dough and expand it about 1.5-2 times. At this time preheat the oven to 180 degrees.
-
Put the dough together with the mold into the preheated oven, adjust the temperature to 160 degrees, lower layer, and bake for 20 minutes.
-
During the baking process of bread, you can prepare various vegetables and meat ingredients. The principle is: put what you like. I put fried eggs, sausage, lettuce, ham, tomatoes.
-
Immediately after the baked bread comes out of the oven, unmold it and let it cool. If the bread stays in the mold, it will become soggy.
-
Use a serrated knife to cut each bulge in the bread and stuff it with ingredients.

Beautiful flower whole wheat bread is ready.
