Jellyfish mixed with fresh white fungus
Overview
I don’t like hot dishes but prefer cold dishes when the weather is hot. Today I mixed a portion with fresh white fungus, shredded jellyfish and oil-pickled enoki mushrooms. It was really refreshing.

Prepare all ingredients.

Pick and wash the fresh white fungus and set aside.

Add water and fine salt to the pot and bring to a boil, blanch the fresh white fungus for two minutes.

Serve the blanched white fungus with shredded jellyfish and oil-soaked gold needles.

Make another soy sauce, balsamic vinegar and spicy oil sauce.
