Fresh vegetable fish balls with tomato sauce
Overview
The fish balls in tomato sauce have a pleasing color and a sweet and sour taste. This is the purpose of making a lot of extra fish fillings when I make fresh fish wontons in sour soup😇

Fresh vegetable and fish fillings (for details, please refer to the recipe: Fresh Fish Wontons in Sour Soup), add appropriate amount of salt, 1 egg white, 3 spoons of corn starch, mix well

Heat oil in a small pot until it is 60% hot, pinch the stuffing with your palms and squeeze out the fish balls, remove them with a spoon and throw them into the oil

Fry until the fish balls float and the skin is golden brown, then take them out

After the first frying, let it cool slightly

When the oil is 80% hot, fry again for about 2 minutes. Once the color is satisfied, remove and set aside. The skin becomes crispier after re-frying

Add a little oil to the wok

Add minced garlic and sauté until fragrant

Reduce heat to low, add tomato paste and cook until thick and bubbly. Add sugar and water starch as needed to adjust sweetness and sourness and consistency

Stew in the fried fish balls, coat evenly with the sauce and turn off the heat
