  1. Clean the sea bass, cut open the back and score the sides. Cut the onions and ginger into shreds and soak in cold water for five minutes. Arrange the fish on a plate and marinate the fish in water soaked with onion and ginger for about 15 minutes, turning over halfway to avoid uneven flavoring.

  2. Add water to the pot, add two spoons of cooking wine to the water, and the onion and ginger water from step 1. Note that the onion and ginger should be reserved. Place the chopsticks in a tic-tac-toe shape. Remember that the chopsticks must be at least 1 cm above the water surface.

  3. Place the fish on chopsticks and steam over medium heat for about eight minutes.

  4. Spread part of the green onion and ginger shreds from the first step on the plate, then put the fish, and sprinkle the remaining part on the fish surface. Since my kids don’t like spicy food, I cut some dried chili peppers for garnish. If you like spicy food, you can sprinkle with fresh chili peppers, or fry the chili peppers in the next step.

  5. Mix the auxiliary ingredients (salt, sweet and sour oyster sauce, soy sauce and boiling water) thoroughly and pour it on the fish. Heat oil in the pot (you can fry chili peppers at this time if you like spicy food), pour it on the fish while it's hot, and you're done!
