Beef mooncake
Overview
Sauce Beef, just in time for the Mid-Autumn Festival, I made a beef mooncake, using the traditional sugar mooncake skin to make a beef filling mooncake.

Dough: Mix maltose, blended oil, and water to form a paste. Add flour into the paste to form a slightly soft dough. Put it in a plastic bag to rest.

Add fried peanuts and cooked sesame seeds to the sauced beef and mix evenly. Add oyster sauce to taste and make a filling. Set aside.

Divide the beef filling into equal sized portions.

Divide the dough into equal-sized portions.

Wrap the fillings in dough, put them into molds, and press them into mooncakes to make green embryos.

Preheat the electric oven to 200 degrees with upper and lower heat, put in the green embryo and bake for 5 minutes to set it. After it is set, take it out and brush it with egg wash (egg wash is the egg wash mixed with half of the egg whites removed).

After shaping, put the green embryo into the electric oven, adjust it to 180 degrees, and bake it for 15 minutes.

After the baked mooncakes are cooled, put them in a plastic bag to soften and extract the pulp.

Remove after softening and pulping for 24 hours.
