Start preparing the dumpling filling. First, break the eggs into a bowl and use chopsticks to break up the egg liquid. Put more oil in the pot than for stir-frying. When the oil temperature reaches 60%, start pouring the egg liquid into the pot. Pay attention to pouring it slowly while stirring it with chopsticks in the pot. The eggs will turn into broken egg pieces as shown in the picture. When the eggs turn golden brown, turn off the heat. If you are willing to eat older eggs, you can fry them for a while
